Ingredients

  • 3 medium zucchinis
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese optional
  • Red pepper flakes optional

Instructions

  • Wash the zucchinis thoroughly and cut off the ends.
  • Spiralize the zucchinis using a spiralizer or vegetable peeler.
  • Place the spiralized zucchini in a colander, sprinkle with salt, and let sit for 10 minutes.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté for 1 minute.
  • Add cherry tomatoes and cook for 2-3 minutes.
  • Rinse the zucchini to remove excess salt, then add to the skillet.
  • Toss everything together for 2-3 minutes.
  • Stir in fresh basil and season with salt and pepper.
  • Serve immediately.
