Ingredients

  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Optional: Parmesan cheese for topping

Instructions

  • Wash and dry the zucchinis.
  • Cut off the ends of the zucchinis.
  • Using a spiralizer, create zucchini noodles.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté for 1 minute.
  • Add cherry tomatoes and bell pepper; cook for 2-3 minutes.
  • Toss in the zucchini noodles and cook for another 2-3 minutes until just tender.
  • Season with salt and pepper to taste.
  • Remove from heat and garnish with fresh basil.
  • Serve immediately, optionally topped with Parmesan cheese.
