Wash and dry the zucchinis.
Cut off the ends of the zucchinis.
Using a spiralizer, create zucchini noodles.
Heat olive oil in a large skillet over medium heat.
Add minced garlic and sauté for 1 minute.
Add cherry tomatoes and bell pepper; cook for 2-3 minutes.
Toss in the zucchini noodles and cook for another 2-3 minutes until just tender.
Season with salt and pepper to taste.
Remove from heat and garnish with fresh basil.
Serve immediately, optionally topped with Parmesan cheese.
