Ingredients

  • 2 medium zucchinis grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped green onions
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Olive oil for frying
  • Sour cream or yogurt for serving

Instructions

  • Grate the zucchinis and place them in a clean kitchen towel to remove excess moisture.
  • In a mixing bowl, combine the grated zucchini and salt. Let it sit for 10 minutes.
  • Squeeze the zucchinis in the towel to extract more moisture.
  • Add the flour, Parmesan cheese, egg, green onions, black pepper, and garlic powder to the bowl.
  • Mix until well combined, creating a thick batter.
  • Heat a skillet over medium heat and add olive oil.
  • Spoon the batter into the skillet, forming small patties.
  • Cook for 3-4 minutes on each side until golden brown and crispy.
  • Remove fritters and place them on paper towels to absorb excess oil.
  • Serve warm with a dollop of sour cream or yogurt on top.
