Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Cooking spray or olive oil

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and trim the ends of the zucchinis.
  • Cut the zucchinis into fry-sized sticks.
  • In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  • In another bowl, beat the eggs.
  • Dip each zucchini stick into the egg, then coat it in the breadcrumb mixture.
  • Place the coated zucchini fries on a baking sheet lined with parchment paper.
  • Spray the fries lightly with cooking spray or drizzle with olive oil.
  • Bake for 20 minutes, flipping halfway through, until golden and crispy.
  • Serve hot with your favorite dipping sauce.
