Ingredients

  • 4 medium zucchinis sliced
  • 1 cup shredded cheddar cheese
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for greasing

Instructions

  • Preheat your oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish with olive oil.
  • In a large bowl, combine the sliced zucchinis, chopped onion, and minced garlic.
  • In another bowl, mix the cottage cheese, eggs, oregano, salt, and pepper.
  • Layer half of the zucchini mixture in the baking dish.
  • Spread half of the cheese mixture over the zucchini.
  • Add half of the breadcrumbs on top.
  • Repeat the layers with the remaining zucchini, cheese mixture, and breadcrumbs.
  • Top with the shredded cheddar cheese.
  • Bake in the preheated oven for 40 minutes or until golden brown and bubbly.
