In a large bowl, combine grated zucchini, sugar, and oil.
Mix in eggs and vanilla until well blended.
In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.
Fold in chopped nuts and raisins if desired.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice and serve the zucchini bread.
