Ingredients

  • 2 cups grated zucchini
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg optional
  • ½ cup chopped nuts or chocolate chips optional

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, whisk together the oil, sugar, eggs, and vanilla extract.
  • Add the grated zucchini to the mixture and stir until combined.
  • In another bowl, mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Gradually incorporate the dry ingredients into the wet mixture, stirring gently.
  • If desired, fold in nuts or chocolate chips.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
