Ingredients

  • Rice paper wrappers
  • Shrimp or tofu cooked
  • Vermicelli noodles
  • Lettuce leaves
  • Fresh mint and cilantro
  • Carrots julienned
  • Cucumbers julienned
  • Peanut dipping sauce

Instructions

  • Prepare all ingredients by cooking shrimp or tofu and cutting vegetables.
  • Soak vermicelli noodles in warm water for about 5 minutes until soft.
  • Fill a large dish with warm water for soaking rice paper.
  • Dip a rice paper wrapper in the water for about 10 seconds until soft.
  • Lay the softened rice paper on a clean surface.
  • Place a lettuce leaf on the bottom third of the wrapper.
  • Add a small amount of vermicelli noodles on top of the lettuce.
  • Layer shrimp or tofu, carrots, cucumbers, mint, and cilantro.
  • Roll the rice paper tightly from the bottom over the filling.
  • Fold in the sides and continue rolling until fully wrapped.
