Ingredients

  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can corn drained
  • 1 bell pepper diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cups diced tomatoes
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and bell pepper; sauté until soft.

  • Add diced tomatoes and mix well.
  • Incorporate black beans, kidney beans, and corn.

  • Bring to a simmer, then reduce heat to low.
  • Cover and cook for 20 minutes, stirring occasionally.
