Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup cooked bacon crumbled
  • 2 green onions chopped
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the potatoes thoroughly and dry them.
  • Prick each potato several times with a fork.
  • Brush the skins with olive oil and sprinkle with salt.
  • Bake potatoes directly on the oven rack for about 45 minutes.
  • Once cooked, remove the potatoes and let them cool slightly.
  • Cut each potato in half lengthwise and scoop out the flesh into a bowl.
  • Add sour cream, milk, half of the cheese, bacon, green onions, salt, and pepper to the bowl.
  • Mix until creamy and well combined.
  • Spoon the mixture back into the potato skins, sprinkle with remaining cheese, and bake for an additional 15-20 minutes.
