Preheat your oven to 400°F (200°C).
Wash the potatoes thoroughly and dry them.
Prick each potato several times with a fork.
Brush the skins with olive oil and sprinkle with salt.
Bake potatoes directly on the oven rack for about 45 minutes.
Once cooked, remove the potatoes and let them cool slightly.
Cut each potato in half lengthwise and scoop out the flesh into a bowl.
Add sour cream, milk, half of the cheese, bacon, green onions, salt, and pepper to the bowl.
Mix until creamy and well combined.
Spoon the mixture back into the potato skins, sprinkle with remaining cheese, and bake for an additional 15-20 minutes.
