Ingredients

  • 200 g rotini pasta
  • 1 can 150g tuna in oil, drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup black olives sliced
  • 1/4 cup red onion finely chopped
  • 1/2 cup cucumber diced
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  • Bring a pot of salted water to a boil.
  • Add the rotini pasta and cook according to package instructions until al dente.
  • Drain the pasta and rinse under cold water to cool.
  • In a large bowl, combine the drained tuna, cherry tomatoes, black olives, red onion, cucumber, and parsley.
  • Add the cooled pasta to the bowl.
  • In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the pasta salad and toss to combine.
  • Taste and adjust seasoning if necessary.
  • Chill in the refrigerator for at least 30 minutes before serving.
  • Serve cold and enjoy!
