Ingredients

  • 8 oz tortellini cheese or meat-filled
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1 bell pepper diced
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Parmesan cheese for topping

Instructions

  • Boil water in a large pot and add a pinch of salt.
  • Add the tortellini and cook according to package instructions until al dente.
  • Drain the tortellini and rinse under cold water to stop cooking.
  • In a large bowl, combine the cooked tortellini, cherry tomatoes, cucumber, red onion, and bell pepper.
