Ingredients

  • 2 cups cooked rice
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup sour cream
  • 1 avocado sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  • In a skillet, brown the ground beef over medium heat until fully cooked.
  • Drain excess fat from the skillet.
  • Add taco seasoning to the beef and mix well with water according to the package instructions.
  • Allow the mixture to simmer for about 5 minutes, stirring occasionally.
  • While the beef is cooking, prepare the cooked rice in a separate pot if not already done.
  • Once the beef is ready, layer the rice in serving bowls.
  • Top the rice with the seasoned beef mixture evenly.
  • Add shredded lettuce and diced tomatoes on top of the beef.
  • Sprinkle shredded cheese over the entire dish.
  • Finish with a drizzle of sour cream, sliced avocado, and fresh cilantro. Serve with lime wedges on the side.
