Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup salsa
  • 10-12 tortilla chips
  • Fresh cilantro for garnish
  • Diced tomatoes for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef or turkey over medium heat until fully cooked.
  • Drain excess fat from the meat.
  • Stir in the taco seasoning, black beans, corn, and salsa. Cook for 5 minutes.
  • In a baking dish, layer half of the meat mixture.
  • Add a layer of tortilla chips over the meat.
  • Sprinkle one cup of shredded cheese on top of the chips.
  • Repeat the layers with the remaining meat mixture, chips, and cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly.
  • Remove from oven and let cool for a few minutes before garnishing with cilantro and tomatoes.
