Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 1 cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 unbaked pie crust

Instructions

  • Preheat your oven to 350°F (175°C).
  • Peel and boil the sweet potatoes until tender, about 20 minutes.
  • Drain and mash the sweet potatoes in a large bowl.
  • Add sugar, evaporated milk, eggs, and vanilla extract to the bowl.
  • Mix in cinnamon, nutmeg, ginger, and salt until smooth.
  • Pour the sweet potato filling into the unbaked pie crust.
  • Smooth the top with a spatula.
  • Bake in the preheated oven for 45-50 minutes.
  • Check for doneness by inserting a knife; it should come out clean.
