Ingredients

  • 2 cups rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper chopped
  • 1/2 red onion sliced
  • 1 cup corn canned or frozen
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  • Boil salted water and cook the rotini pasta until al dente; drain and rinse with cold water.
  • In a large bowl, combine cooked pasta with cherry tomatoes, cucumber, bell pepper, red onion, and corn.
  • In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  • Pour the dressing over the pasta and vegetable mixture.
  • Toss everything together until well combined.
  • Add chopped parsley and toss again.
  • Adjust seasoning to taste.
  • Chill the salad in the refrigerator for at least 30 minutes.
  • Serve cold and enjoy!
