Ingredients

  • 2 salmon fillets
  • 1 cup cooked quinoa
  • 1/2 cup spinach chopped
  • 1/4 cup cream cheese
  • 1/4 cup feta cheese
  • 2 cloves garlic minced
  • 1 lemon zested and juiced
  • Salt and pepper to taste
  • Fresh dill for garnish
  • Olive oil for drizzling

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix cooked quinoa, chopped spinach, cream cheese, feta, minced garlic, lemon juice, salt, and pepper.
  • Carefully cut a pocket in each salmon fillet.
  • Stuff each pocket with the quinoa mixture.
  • Place stuffed salmon on a greased baking sheet.
  • Drizzle olive oil on top of each fillet.
  • Sprinkle lemon zest over the salmon.
  • Bake in the preheated oven for 20 minutes, or until salmon is cooked through.
  • Garnish with fresh dill before serving.
  • Serve hot with a side of your choice.
