Preheat the oven to 375°F (190°C).
In a bowl, mix cooked quinoa, chopped spinach, cream cheese, feta, minced garlic, lemon juice, salt, and pepper.
Carefully cut a pocket in each salmon fillet.
Stuff each pocket with the quinoa mixture.
Place stuffed salmon on a greased baking sheet.
Drizzle olive oil on top of each fillet.
Sprinkle lemon zest over the salmon.
Bake in the preheated oven for 20 minutes, or until salmon is cooked through.
Garnish with fresh dill before serving.
Serve hot with a side of your choice.
