Ingredients

  • 2 cups fresh strawberries hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup baking powder
  • 1/2 cup unsalted butter softened
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh mint leaves for garnish

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix strawberries with granulated sugar and let sit for 10 minutes.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream the butter until fluffy, then add sugar and mix well.
  • Beat in the eggs, one at a time, followed by vanilla extract.
  • Gradually mix in the flour mixture, alternating with milk until just combined.
  • Pour batter into a greased cake pan and spread evenly.
  • Bake for 25 minutes or until a toothpick comes out clean.
  • Cool the cake in the pan for 10 minutes, then transfer to a wire rack.
  • Once cooled, slice the cake in half horizontally and layer with strawberries and whipped cream.
