Preheat your oven to 325°F (160°C).
In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
Grease a silicone mold or muffin tin with non-stick spray.
Evenly distribute diced bell peppers and cooked bacon or sausage into each cup.
Pour the egg mixture over the ingredients in the molds, filling each about 3/4 full.
Bake in the preheated oven for 25 minutes, or until set and slightly golden.
Remove from the oven and let cool for a few minutes.
Gently lift the egg bites from the molds.
Garnish with fresh herbs before serving.
Enjoy warm or at room temperature!
