Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/2 cup diced bell peppers
  • 1/4 cup cooked bacon or sausage optional
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 325°F (160°C).
  • In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
  • Grease a silicone mold or muffin tin with non-stick spray.
  • Evenly distribute diced bell peppers and cooked bacon or sausage into each cup.
  • Pour the egg mixture over the ingredients in the molds, filling each about 3/4 full.
  • Bake in the preheated oven for 25 minutes, or until set and slightly golden.
  • Remove from the oven and let cool for a few minutes.
  • Gently lift the egg bites from the molds.
  • Garnish with fresh herbs before serving.
  • Enjoy warm or at room temperature!
