Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 cup bell peppers sliced
  • 1 cup bean sprouts
  • Fresh herbs mint, cilantro
  • Soy sauce for dipping

Instructions

  • Prepare all vegetables by washing and slicing them into thin strips.
  • Fill a shallow dish with warm water.
  • Dip one rice paper wrapper in the water for about 10 seconds until soft.
  • Remove the wrapper and lay it flat on a clean surface.
  • Place a small amount of each vegetable and herbs in the center of the wrapper.
  • Fold the bottom of the wrapper over the filling.
  • Fold the sides inward, then roll the wrapper tightly to seal.
  • Repeat with the remaining wrappers and filling.
  • Serve immediately with soy sauce or your favorite dipping sauce.
  • Enjoy your fresh spring rolls!
