Prepare all vegetables by washing and slicing them into thin strips.
Fill a shallow dish with warm water.
Dip one rice paper wrapper in the water for about 10 seconds until soft.
Remove the wrapper and lay it flat on a clean surface.
Place a small amount of each vegetable and herbs in the center of the wrapper.
Fold the bottom of the wrapper over the filling.
Fold the sides inward, then roll the wrapper tightly to seal.
Repeat with the remaining wrappers and filling.
Serve immediately with soy sauce or your favorite dipping sauce.
