Ingredients

  • 2 cups fresh spinach
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • Water as needed
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Instructions

  • Wash the fresh spinach thoroughly.
  • Steam the spinach for about 2-3 minutes until wilted.
  • Place the steamed spinach in a blender and puree until smooth.
  • In a bowl, combine the flour and salt.
  • Make a well in the center of the flour and add the eggs and olive oil.
  • Pour the spinach puree into the well.
  • Mix until a dough forms.
  • Knead the dough for about 5 minutes until smooth.
  • Roll out the dough into thin sheets.
  • Cut the sheets into your desired pasta shape.
  • Boil water in a pot and cook the pasta for 3-4 minutes.
  • Drain and serve with sauce or cheese.
