Ingredients

  • 1 whole chicken 3-4 pounds
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • Fresh herbs rosemary and thyme
  • Lemon wedges for serving

Instructions

  • Preheat your oven to 450°F (230°C).
  • Place the chicken breast-side down on a cutting board.
  • Using kitchen shears, cut along both sides of the backbone to remove it.
  • Flip the chicken over and press down on the breastbone to flatten it.
  • Pat the chicken dry with paper towels.
  • Rub olive oil all over the chicken.
  • Season generously with salt, pepper, garlic powder, and paprika.
  • Place fresh herbs on top of the chicken.
  • Transfer the chicken to a roasting pan.
  • Roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).
