  • 1 cup brine water, salt, sugar, herbs
  • 3 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon black pepper
  • Wood chips hickory or applewood

Instructions

  • Prepare the brine by mixing water, salt, sugar, and herbs in a large pot.
  • Submerge the turkey in the brine and refrigerate for 12-24 hours.
  • Remove the turkey from the brine and pat it dry with paper towels.
  • Rub the turkey with olive oil, ensuring even coverage.
  • Season the turkey with smoked paprika, garlic powder, onion powder, and black pepper.
  • Let the turkey rest for 30 minutes at room temperature.
  • Preheat your smoker to 225°F (107°C).
  • Add soaked wood chips to the smoker for added flavor.
  • Place the turkey on the smoker grate, breast side up.
  • Smoke the turkey for 4-6 hours, or until the internal temperature reaches 165°F (74°C).
  • Let the turkey rest for at least 30 minutes before carving.
