Season the short ribs with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Brown the short ribs on all sides, about 3-4 minutes per side.
Remove ribs and place them in the slow cooker.
Add diced onion and minced garlic to the skillet; sauté for 2-3 minutes.
Pour in beef broth and red wine, scraping the bottom of the skillet.
Stir in soy sauce, brown sugar, and thyme.
Pour the mixture over the ribs in the slow cooker.
Cover and cook on low for 8 hours or high for 4 hours.
