Ingredients

  • 3-4 lbs sirloin tip roast
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons rosemary chopped
  • 1 teaspoon thyme chopped
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Vegetables for roasting carrots, potatoes, zucchini

Instructions

  • Preheat your oven to 350°F (175°C).
  • Pat the sirloin tip roast dry with paper towels.
  • Rub the olive oil over the entire roast.
  • Season the roast generously with salt, pepper, garlic, rosemary, and thyme.
  • Heat a skillet over medium-high heat and sear the roast on all sides until browned.
  • Transfer the roast to a roasting pan.
  • Mix the beef broth and Worcestershire sauce and pour it around the roast.
  • Add your choice of vegetables to the pan.
  • Cover the pan with foil and roast for 1 hour.
  • Remove the foil and continue roasting until the internal temperature reaches your desired doneness (135°F for medium-rare).
