Ingredients

  • 1 pound cooked shrimp peeled and deveined
  • 1 cup diced cucumber
  • 1 cup diced bell pepper red or green
  • 1 cup diced apple
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh dill chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • Gather all ingredients and a large mixing bowl.
  • In the bowl, combine shrimp, cucumber, bell pepper, apple, and red onion.
  • In a separate bowl, mix mayonnaise, lemon juice, salt, and pepper.
  • Pour the dressing over the shrimp and vegetable mixture.
  • Gently toss everything together until well-coated.
  • Add fresh dill and mix again.
  • Taste and adjust seasoning as necessary.
  • Cover and refrigerate for at least 30 minutes.
