Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 cup Greek yogurt optional
  • Fresh cilantro for garnish
  • 1 lime juiced
  • 1/2 cup chopped onions
  • 1/4 cup nuts optional

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes thoroughly.
  • Cut the potatoes in half lengthwise.
  • Drizzle olive oil over the cut sides.
  • Sprinkle salt, pepper, and paprika on the potatoes.
  • Place the potatoes cut side down on a baking sheet.
  • Bake for 30-35 minutes or until tender.
  • Remove from the oven and let cool slightly.
  • Scoop out the flesh into a bowl and mash if desired.
  • Serve warm, garnished with yogurt, onions, nuts, and lime juice.
