Ingredients

  • 1 lb fresh salmon cooked and flaked
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • 1/4 cup green onions chopped
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  • Preheat your skillet over medium heat and add olive oil.
  • In a large bowl, combine the cooked salmon with breadcrumbs.
  • Add the beaten eggs, green onions, parsley, mustard, garlic powder, salt, and pepper.
  • Mix until well combined and the mixture holds together.
  • Shape the mixture into patties, about 2 inches in diameter.
  • Carefully place the patties in the preheated skillet.
  • Cook for 4-5 minutes on one side until golden brown.
  • Flip the patties and cook for another 4-5 minutes.
  • Remove from the skillet and place on paper towels to drain excess oil.
  • Serve warm with your favorite dipping sauce.
