Ingredients

  • 8 rice paper sheets
  • 200 g cooked shrimp peeled and deveined
  • 1 cup lettuce leaves shredded
  • 1 cup vermicelli noodles cooked
  • 1 carrot julienned
  • 1 cucumber julienned
  • Fresh herbs mint, cilantro
  • Soy sauce or hoisin sauce for dipping

Instructions

  • Prepare all ingredients by washing and cutting as needed.
  • Soak one rice paper sheet in warm water for 10-15 seconds until pliable.
  • Place the softened rice paper on a clean surface.
  • Layer a few lettuce leaves on the lower third of the rice paper.
  • Add a small amount of vermicelli noodles on top of the lettuce.
  • Place shrimp, carrot, cucumber, and fresh herbs on the noodles.
  • Fold the sides of the rice paper over the filling.
  • Roll the rice paper from the bottom up, tucking in the filling as you go.
  • Repeat the process with the remaining rice paper sheets and filling.
  • Serve the rolls with soy sauce or hoisin sauce for dipping.
