Ingredients

  • 2 cups of white rice
  • 4 chicken breasts
  • 1 onion chopped
  • 2 cloves of garlic minced
  • 1 bell pepper diced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • In a large pot, heat olive oil over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in minced garlic and diced bell pepper, cooking for another 2 minutes.
  • Season chicken breasts with paprika, salt, and pepper.
  • Add the chicken to the pot and brown on both sides.
  • Pour in 4 cups of water and bring to a boil.
  • Add the rinsed rice and soy sauce to the pot.
  • Reduce heat, cover, and simmer for 20 minutes until rice is cooked and chicken is tender.
  • Fluff the rice with a fork and serve garnished with fresh cilantro.
