Rinse the rice under cold water until the water runs clear.
In a large pot, heat olive oil over medium heat.
Add chopped onions and sauté until translucent.
Stir in minced garlic and diced bell pepper, cooking for another 2 minutes.
Season chicken breasts with paprika, salt, and pepper.
Add the chicken to the pot and brown on both sides.
Pour in 4 cups of water and bring to a boil.
Add the rinsed rice and soy sauce to the pot.
Reduce heat, cover, and simmer for 20 minutes until rice is cooked and chicken is tender.
Fluff the rice with a fork and serve garnished with fresh cilantro.
