Ingredients

  • 1 ½ cups graham cracker crumbs
  • cup granulated sugar
  • cup unsalted butter melted
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 2 tbsp cocoa powder
  • 1 cup buttermilk
  • 2 tbsp red food coloring

Instructions

  • Preheat the oven to 325°F (160°C).
  • Mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press the mixture into the bottom of a springform pan to form the crust.
  • Bake the crust for 10 minutes and let it cool.
  • Beat cream cheese and sugar until smooth.
  • Add sour cream and mix until combined.
  • Incorporate eggs one at a time, mixing well after each addition.
  • Stir in vanilla, cocoa powder, buttermilk, and red food coloring until evenly blended.
  • Pour the cheesecake mixture over the cooled crust.
  • Bake for about 1 hour, or until the center is set.
  • Let the cheesecake cool in the oven for 1 hour.
