Rinse the red lentils under cold water until the water runs clear.
Heat olive oil in a large pot over medium heat.
Add chopped onion, carrot, and celery; sauté until softened, about 5-7 minutes.
Stir in minced garlic, cumin, and turmeric; cook for another minute.
Add rinsed lentils and vegetable broth to the pot.
Bring the mixture to a boil, then reduce heat to low.
Cover and simmer for about 20-25 minutes, or until lentils are tender.
Season with salt and pepper to taste.
Use an immersion blender to puree the soup, or leave it chunky if preferred.
Serve warm, garnished with a drizzle of olive oil and fresh herbs.
