Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 sandwich buns
  • Coleslaw for topping
  • Pickles for garnish

Instructions

  • Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Place the chicken breasts in a slow cooker or Instant Pot.
  • Add the barbecue sauce over the chicken.
  • If using a slow cooker, cook on low for 4 hours or high for 2 hours. For Instant Pot, cook on high pressure for 10 minutes.
  • Once cooked, shred the chicken using two forks.
  • Mix the shredded chicken with the sauce in the cooker.
  • Toast the sandwich buns until golden brown.
  • Assemble the sandwiches by placing pulled chicken on the bottom bun.
  • Add coleslaw on top of the chicken for crunch.
  • Finish with pickles and the top bun. Serve immediately.
