Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • 1/2 cup cold water
  • 1 tablespoon lemon juice optional

Instructions

  • In a large bowl, combine flour and salt.
  • Add cold, cubed butter to the flour mixture.
  • Using a pastry cutter, mix until the mixture resembles coarse crumbs.
  • In a separate bowl, mix cold water and lemon juice.
  • Gradually add the water mixture to the flour mixture, stirring until combined.
  • Form the dough into a ball, wrap in plastic wrap, and chill for at least 30 minutes.
  • On a floured surface, roll out the dough into a rectangle.
  • Fold the dough into thirds, like a letter, and roll out again.
  • Repeat the folding and rolling process 3-4 times for flaky layers.
  • Chill the dough again for 20 minutes before using.
