Ingredients

  • 1 cup rolled oats
  • 1 scoop protein powder
  • 1 banana
  • 2 eggs
  • 1 cup milk or almond milk
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Cooking spray or oil for the pan
  • Optional toppings: Greek yogurt honey, fresh fruits

Instructions

  • In a blender, combine the rolled oats, protein powder, baking powder, and salt. Blend until fine.
  • Add the banana, eggs, milk, and vanilla extract to the blender.
  • Blend until the mixture is smooth and well combined.
  • Heat a non-stick skillet over medium heat and lightly grease it.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, about 2-3 minutes.
  • Flip the pancakes and cook for another 2-3 minutes until golden brown.
  • Repeat with the remaining batter, greasing the skillet as needed.
  • Serve warm with your choice of toppings.
