Ingredients

  • 1 bone-in prime rib roast 4-6 lbs
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • Optional: 1 tablespoon Dijon mustard

Instructions

  • Preheat your oven to 450°F (230°C).
  • Place the prime rib roast on a rack in a roasting pan.
  • Rub olive oil all over the roast.
  • In a bowl, mix garlic, rosemary, thyme, salt, and pepper.
  • Apply the herb mixture evenly over the meat.
  • Insert a meat thermometer into the thickest part of the roast.
  • Roast in the preheated oven for 20 minutes.
  • Reduce the oven temperature to 325°F (165°C) and continue roasting.
  • Cook until the thermometer reads 130°F (54°C) for medium-rare.
  • Remove the roast from the oven and let it rest for 20-30 minutes before slicing.
