Ingredients

  • 5-7 lbs prime rib roast
  • 4 cloves garlic minced
  • 2 tablespoons rosemary chopped
  • 2 tablespoons thyme chopped
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • Vegetables for roasting carrots, potatoes, Brussels sprouts

Instructions

  • Preheat your oven to 450°F (232°C).
  • Allow the prime rib to come to room temperature for about 1 hour.
  • Mix garlic, rosemary, thyme, salt, and pepper in a small bowl.
  • Rub the olive oil all over the roast.
  • Generously coat the roast with the herb mixture.
  • Place the roast on a rack in a roasting pan, bone side down.

  • Reduce the temperature to 325°F (163°C) and continue roasting.
