Ingredients

  • 4 large potatoes peeled and diced
  • 1 onion chopped
  • 2 carrots diced
  • 3 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Optional toppings: bacon bits chives, or sour cream

Instructions

  • Peel and dice the potatoes into small cubes.
  • Chop the onion and carrots into small pieces.
  • Add the diced potatoes, onion, carrots, and garlic to the crock pot.
  • Pour in the vegetable or chicken broth until all ingredients are covered.
  • Season with salt and pepper to taste.
  • Cover the crock pot and set it on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, use a potato masher to blend the soup to your desired consistency.
  • Stir in the heavy cream and shredded cheese until melted.
  • Serve hot, garnished with your choice of toppings.
