Ingredients

  • 4 medium russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions
  • Olive oil
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes thoroughly.
  • Poke holes in each potato with a fork.
  • Rub the potatoes with olive oil, then sprinkle with salt.
  • Bake the potatoes for 45-60 minutes until tender.
  • Let them cool slightly, then cut them in half lengthwise.
  • Scoop out the flesh, leaving a thin layer of potato.
  • Brush the skins with olive oil and season with salt and pepper.
  • Return the skins to the oven for 10-15 minutes until crispy.
  • Fill the skins with cheese and bacon, then bake until the cheese melts.
