Wash and scrub the potatoes thoroughly.
Poke holes in each potato with a fork.

Bake the potatoes for 45-60 minutes until tender.
Let them cool slightly, then cut them in half lengthwise.
Scoop out the flesh, leaving a thin layer of potato.
Brush the skins with olive oil and season with salt and pepper.
Return the skins to the oven for 10-15 minutes until crispy.
Fill the skins with cheese and bacon, then bake until the cheese melts.
