Preheat your oven to 375°F (190°C).
Pat the pork loin dry with paper towels.
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
Rub the herb mixture all over the pork loin.
Heat a skillet over medium-high heat and sear the pork loin on all sides until golden brown.
Transfer the pork loin to a roasting pan.
In the same skillet, deglaze with chicken broth and Dijon mustard.
Pour the mixture over the pork loin.
Add chopped vegetables around the pork in the roasting pan.
Roast in the oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).
