Ingredients

  • 2 lbs pork loin
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons fresh rosemary chopped
  • 2 teaspoons fresh thyme chopped
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • Assorted vegetables carrots, potatoes, etc.

Instructions

  • Preheat your oven to 375°F (190°C).
  • Pat the pork loin dry with paper towels.
  • In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  • Rub the herb mixture all over the pork loin.
  • Heat a skillet over medium-high heat and sear the pork loin on all sides until golden brown.
  • Transfer the pork loin to a roasting pan.
  • In the same skillet, deglaze with chicken broth and Dijon mustard.
  • Pour the mixture over the pork loin.
  • Add chopped vegetables around the pork in the roasting pan.
  • Roast in the oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).
