In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chopped pistachios and white chocolate chips, if using.
Drop tablespoons of dough onto the prepared baking sheet, leaving space between each one.
Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
