Select a ripe pineapple, firm and fragrant.
Cut off the top and bottom of the pineapple.
Stand the pineapple upright and slice off the skin.
Remove any remaining 'eyes' with a small knife.
Chop the pineapple into chunks.
Add pineapple chunks to a blender.
Blend until smooth, about 1-2 minutes.
Strain the mixture through a fine mesh sieve into a bowl.
Press the pulp to extract as much juice as possible.
If desired, sweeten with sugar and stir well.
Serve over ice and garnish with mint leaves.
