In a large bowl, mix flour, salt, and sugar.
Add diced butter and mix until crumbly.
Stir in ice water, a tablespoon at a time, until dough forms.
Divide the dough in half, shape into disks, and refrigerate for 30 minutes.
Roll out one disk on a floured surface to fit your pie pan.
Place the rolled dough in the pie pan and trim the excess.
In another bowl, combine sliced apples, sugar, flour, cinnamon, and lemon juice.
Pour the apple mixture into the prepared crust.
Roll out the second dough disk and create a lattice top or cover the pie.
Bake for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30 minutes.
