Ingredients

  • 2 pounds of baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the baby potatoes thoroughly.
  • Cut the potatoes in half, or leave them whole if they're small.
  • In a large bowl, combine the potatoes with olive oil, garlic powder, onion powder, thyme, salt, and pepper.
  • Toss until the potatoes are evenly coated with the oil and seasonings.
  • Arrange the potatoes in a single layer on a baking sheet, cut side down.
  • Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
  • Halfway through cooking, flip the potatoes for even browning.
  • Once done, remove from the oven and let them cool slightly.
  • Garnish with fresh parsley before serving.
