Preheat your oven to 425°F (220°C).
Wash and scrub the baby potatoes thoroughly.
Cut the potatoes in half, or leave them whole if they're small.
In a large bowl, combine the potatoes with olive oil, garlic powder, onion powder, thyme, salt, and pepper.
Toss until the potatoes are evenly coated with the oil and seasonings.
Arrange the potatoes in a single layer on a baking sheet, cut side down.
Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
Halfway through cooking, flip the potatoes for even browning.
Once done, remove from the oven and let them cool slightly.
Garnish with fresh parsley before serving.
