Ingredients

  • 6 cups chicken or vegetable broth
  • 8 oz. noodles your choice
  • 1 cup sliced carrots
  • 1 cup mushrooms sliced
  • 1 cup protein chicken, tofu, or shrimp
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Green onions for garnish
  • Cilantro for garnish
  • Chili slices for heat optional

Instructions

  • In a large pot, heat oil over medium heat and sauté onions, garlic, and ginger until fragrant.
  • Pour in the broth and bring to a boil.
  • Add sliced carrots and mushrooms; simmer for 10 minutes.
  • Stir in your choice of protein and cook until done.
  • Cook the noodles according to package instructions in a separate pot.
  • Once the noodles are cooked, drain and set aside.
  • Add soy sauce and sesame oil to the broth, adjusting seasoning as needed.
  • Serve the noodles in bowls and ladle the hot broth over them.
  • Garnish with green onions, cilantro, and chili slices.
