Ingredients

  • 3-4 lbs chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1 cup beef broth
  • 1/2 cup pepperoncini peppers with juice
  • 4-6 medium carrots chopped
  • 4-6 medium potatoes cubed
  • Salt and pepper to taste

Instructions

  • Season the chuck roast with salt and pepper.
  • Heat a large skillet over medium-high heat and sear the roast on all sides.
  • Place the seared roast in a slow cooker.
  • Sprinkle the ranch dressing mix and au jus gravy mix over the roast.
  • Pour in the beef broth and add the pepperoncini peppers.
  • Add the chopped carrots and cubed potatoes around the roast.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Once cooked, shred the beef with two forks.
  • Serve the roast with the vegetables and gravy.
