Preheat your oven to 375°F (190°C).
Roll out the pre-made pie crust and cut it into circles to fit your muffin tin.
Press the crust circles into the muffin tin cups.
In a bowl, whisk together the eggs and heavy cream until well combined.
Stir in the shredded cheese and chopped vegetables.
Season with salt and pepper to taste.
Pour the egg mixture into the prepared crusts, filling them about 3/4 full.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
Remove from the oven and allow to cool slightly before serving.
