Wrap the dough in plastic and refrigerate for 30 minutes.
In another bowl, combine apples, lemon juice, cinnamon, nutmeg, and brown sugar.
Roll out the dough and cut into circles.
Place dough circles in a greased muffin tin.
Fill each crust with the apple mixture.
Bake for 20-25 minutes until golden brown.
Let cool before serving.
