Ingredients

  • 2 cups diced tomatoes
  • 1 cup vegetable broth
  • 1 cup corn
  • 1 green bell pepper diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Avocado slices and lime wedges for serving

Instructions

  • Heat a large pot over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in minced garlic and cook for another minute.
  • Add diced tomatoes and cook for 5 minutes.
  • Pour in vegetable broth and bring to a simmer.
  • Add corn and diced bell pepper.
  • Season with cumin, chili powder, salt, and pepper.
  • Simmer for 20 minutes, stirring occasionally.
  • Remove from heat and blend slightly for a smoother texture, if desired.
  • Serve hot, garnished with fresh cilantro and avocado slices.
