Prepare an 8x8 inch pan by greasing it and dusting with powdered sugar.
In a small bowl, combine gelatin with 1/2 cup cold water and let it bloom for 5-10 minutes.
In a saucepan, combine sugar, corn syrup, and 1/4 cup water over medium heat.
Stir until the sugar dissolves, then bring to a boil without stirring.
Remove from heat and add the bloomed gelatin.
Mix until fully dissolved and let cool slightly.
Using a stand mixer, whip the mixture on high speed for about 10 minutes until fluffy.
Add vanilla extract and mix until incorporated.
Pour the mixture into the prepared pan and smooth the top.
Dust with powdered sugar and let it cool for at least 4 hours.
