Ingredients

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1/4 cup water
  • 2 tablespoons gelatin powder
  • 1/2 cup cold water
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  • Prepare an 8x8 inch pan by greasing it and dusting with powdered sugar.
  • In a small bowl, combine gelatin with 1/2 cup cold water and let it bloom for 5-10 minutes.
  • In a saucepan, combine sugar, corn syrup, and 1/4 cup water over medium heat.
  • Stir until the sugar dissolves, then bring to a boil without stirring.
  • Remove from heat and add the bloomed gelatin.
  • Mix until fully dissolved and let cool slightly.
  • Using a stand mixer, whip the mixture on high speed for about 10 minutes until fluffy.
  • Add vanilla extract and mix until incorporated.
  • Pour the mixture into the prepared pan and smooth the top.
  • Dust with powdered sugar and let it cool for at least 4 hours.
